Fall Orange Soup & Warming Spices from Lara's Kitchen


  • 1 butternut squash
  • 1 acorn squashA
  • 2 apples (you choose what kind, so many good ones out there right now!)
  • 4 carrots
  • 1 small onion
  • 2 cloves of garlic
  • 2 thick inches of juicy fresh ginger
  • 6-8 cups of organic chicken broth (have enough to cover the veggies, but you can use water to supplement too)
  • 1 table spoon curry powder
  • 1/2 tablespoon cinnamon

S + P to taste

Optional Dairy additive 1/2 cup milk, and top with 3 big dollops of Crema or sour cream and fresh chives. Directions: Chop first 8 ingredients small enough to cook quickly, put in pan and cover with chicken broth, bring to a boil for about 25 minutes until all are soft.

Add milk and spices.. Put into blender or use a handheld blender in the pan.. blend to desired thickness... S + P to taste and dollop with Crema or sour cream and fresh chives. Enjoy!
